The IKRA restaurant is a unique gastronomic project in the chef's table format by the renowned White Rabbit Family team. This intimate gastro-theater restaurant embodies the idea of popularizing Russian cuisine through modern culinary interpretations while preserving cultural heritage and traditions.
The restaurant is located in an old wooden house, just a few steps from the Volga embankment. The authentic setting and cozy atmosphere create a sense of immersion in the past. The house has a veranda where guests can enjoy Russian-style tea parties while admiring views of the Volga. The main hall accommodates 20 people, creating an intimate and cozy atmosphere where every guest feels special.
One of the key features of the IKRA restaurant in Plyos is the chef's table format, which turns an ordinary dinner into an interactive performance. Guests become direct participants in the cooking process, observing the work of chefs and discovering the secrets of culinary mastery. This presentation creates unforgettable impressions and allows for a deeper understanding and appreciation of each dish.
Instead of the usual table reservations, IKRA operates on a ticket pre-purchase system. This allows for careful planning of visits and the creation of exclusive events available only to a limited number of guests.
The restaurant uses exclusively local products, supporting regional producers and preserving the authenticity of flavors. IKRA not only popularizes Russian cuisine but also carefully preserves the gastronomic heritage of the region, offering guests a unique opportunity to learn about the history and traditions of the Ivanovo region. The restaurant team carefully studies and reinterprets recipes from past centuries, incorporating modern culinary techniques and approaches.
IKRA offers two tasting sets: "Burlaks" and "At the Dacha," each of which reveals different aspects of Russian culture and the gastronomic traditions of the Ivanovo region.
"Burlaks" Set: This dining set is inspired by the image of burlaks and their daily diet. The menu features dishes made from river fish, dried meat, vegetables, and berries. This set symbolizes the harshness and simplicity of burlaks' life, offering guests the opportunity to experience the taste of the Russian hinterland.
"At the Dacha" Set: This set transports guests to the atmosphere of pre-revolutionary dacha estates. The menu includes hay puree soup, stuffed pike head, poached eggs, and black caviar, beluga ham, berry jelly, porridge with black currants. The set also explores the cultural ties between France and Russia, highlighting the influence of French gastronomy on Russian cuisine.
